The King of Italian steaks - traditionally this extra thick Porterhouse comes from the Italian Chianina cattle, bred by the Medici in Tuscany, but it works wonderfully with our Hereford beef.
It is cut around 2 inches thick and is a centrepiece steak.
Best cooked on very hot open fire but also delicious in a very hot griddle pan for 4-5 minutes on each side and then into a hot oven to finish.
