Organic Fillet Steak

You find this cut tucked away underneath the sirloin. It's the most tender cut on the animal. It is usually quite a lean cut with little fat running through it, but our Herefords do produce a slightly more marbled fillet than other breeds.

Fillet steaks are traditionally cut a bit thicker than most other steaks.
